Mono- and diglycerides of fatty acids (E471) are water-in-oil emulsifiers which have many added benefits. They are capable of forming a complex with amylose, control fat crystallization, homogenize, plasticize, inhibit foam formation, act as rehydration aid, impart non-sticking properties, etc. They are used in: bakery products, margarine and shortenings, ice creams and other desserts, starch and starch-containing foods, potato flakes and granules, chocolate and other coatings and fillings, confectionery products, coffee whiteners and other spray-dried foodstuffs, spreads, chewing gums, etc.
Commercial types of mono- and diglycerides can vary in e.g. amount of mono- and diglycerides, saturation, melting point and particle size.
